Tansy

Tansy aromatic herb grows to about a metre high, and has rich, feathery-green leaves which are crowned in summer by clusters of golden flowers. Growing wild over most grassy areas of Europe, plants can generally be obtained from herb farms. In Elizabethan times it was added to the herbs and rushes strewn on house floors, as it has a pleasant, gingery aroma. The plant yields a bright yellow colouring which has, in the past, been used for colouring cakes and puddings; tansy was also widely used as a pot herb.
