Savory

There are two varieties of savory - Summer Savory, which is an annual, and Winter Savory, which is perennial. They are both native to the Mediterranean area. Savories were introduced into Britain by the Romans, and became so popular that they were among the herbs taken by the early settlers to America.

In most of the Latin countries savories are widely used in cooking, and any variety of beans is improved if a sprig of savory is added to the cooking water, much as mint is added when boiling potatoes. Both the savories have a peppery tang, and should be used cautiously but Summer Savory has the milder taste of the two herbs.
