Chicory

The brilliant blue daisy-like flowers of Chicory make an attractive showing in any herb garden, particularly if the plants are grouped together. Chicory plant, one of the oldest pot herbs, was originally known as succory, but it is rarely seen in gardens today. The leaves have a delicious rather tart taste, excellent if added to a lettuce salad.
