Basil

If you enjoy the flavour and aroma of Italian cooking, some plants of Basil are an essential in your herb garden. First known in India, where it is widely used in curries, Basil was introduced into Europe in the sixteenth century and plants were established in English monastery gardens at about the same time. Basil grows in profusion in the warm climate of India but can be difficult to establish in the cooler European weather. Its slightly sweet, peppery flavour increases in cooking and enhances all tomato, fish, cheeseand egg dishes. In France and Greece it is used extensively, while Italian housewives favour it particularly for any cookery that includes tomatoes. A dish of tomatoes sprinkled with basil and baked or grilled will send out a really mouth-watering aroma.
